Here, the white mashed sweet potatoes replaces a portion of flour. The vanila muffin's texture is meltier. Ingredients for 6 persons : 150g of white mashed sweet potatoes 150g of flour 80g of sugar ( of can or coco) 2 teaspoons of baking powder 1 teaspoons of sea salt 1 egg 2 tablespoons of liquid honey 150 ml of milk 45 ml of rapeseed oil 1 teaspoon of vanilla extract Mix 150g of white mashed sweet potatoes with 150g of flour, 80g of sugar, 2 teaspoons of baking powder (chemical) and a teaspoon of salt. In a bowl, beat an egg and add 2 tablespoons of honey, 155ml of milk, 45 ml of oil, 1 teaspoon of vanilla extract. Add this mixture to the first one, slowly, with a spatula. Grease the muffins moulds anf fill them at ¾. Put it in the oven for 25min at 180°C. Let cool before removing from the tin. You will obtain a soft muffin, light and sweet. « Back |
