Invigorated artichokes with raspberries and plantain



Unusual and subtile, a first course full of finesse. It surprises, and revigorates.

Ingredients for 4 persons :
8 artichokes
150g of frozen sweet plantain
2 springs of tarragon
4 teaspoons of raspberry
Salt, ground pepper
Curry

De-freeze the sweet plantain in the microwave for 3 or 4 minutes. Clean and chope the tarragon and mix it with the sweet plantain. Add the vinegar and coconut oil. Add salt and paper. You can also perfume with curry.
