Yucca cassava
100g of yucca cassava brings you 20% of the RDA* in magnesium.
Yucca cassava is also an excellent source of Vitamin C, B1, B2, B3, B5, B6 and B9. They also contain copper and phosphorus.
(*) The Recommended Dietary Allowance: 5 to 6 mg/ day/kg of weight of body, or 350mg for a man who weigh 70 kg, to adapt in accordance with the age, of the physical activities...
Without gluten, yucca cassava allows us to make a yucca cassava couscous, called L'attiéké or a tortilla, called cassave.
The world yucca cassava production is about 250 millions of tons/ years (not so far from potatoes which is about 320 millions of tons/year. Though, yucca cassava is not that known here).

Sweet plantain
Rich in complex carbohydrates (starch) and in fibres, plantain banana is source of energy, progressivelymetabolized by the body.
It brings a significative quantity of minerals and trace elements (in particular in potassium, magnesium, iron, and zinc). It also brings Vitamins B.
Plantain banana is principally eaten as a vegetable-banana, with meat or fish.
Its world production is about 90 millions of tons/year.

Sweet potato
This morning glory is rich in vitamins B6 and C, in copper and manganese. The orange sweet potato has a large quantity of beta-carotene, the vitamin A precursor.
Very rich in starch, sweet potatoes are also a source of potassium and vitamin B9 (folic acid).
It goes very well with meat and fish.
Sweet potatoes are probably from South America. In the tropics, farming can be practiced the whole year.
Its world production is about 145 millions of tons/year.
